Ingredients
So I can't eat carrot, so this isn't a carrot cake but it tastes the same so whatever. Haha. Sweet Potato is really good for you and pairs exceptionally well with cinnamon flavours.
For the cake
- 140 ml vegetable oil, plus extra for greasing
- 2 eggs
- 150g granulated sugar
- 50g dark brown sugar
- 300 g grated sweet potato, (grated weight)
- 100 g raisins and prunes
- 80 g self-raising wholemeal flour
- 100g of white self-raising flour
- 1 pinches salt
- 1/2 tsp bicarbonate of soda
- 1 tsp ground cinnamon
- 1/2 tsp freshly grated nutmeg
- 1/2 tsp mixed spice
For topping I'd recommend cream cheese icing or whipped coconut cream, or coconut frosting.
